Bacon and Cheese Fritatta

A fritatta is sort of an omelet. This dish gives the cook a chance to be creative because you can add
whatever you have in the kitchen. Veggies, seafood, meat, cheeses, etc. The recipe below is but a blue print. You may omit or add items according to your tastes. Enjoy!

Ingredients

  • 6 eggs
  • 1 cup milk
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped green onions
  • 5 bacon strips, cooked and crumbled
  • 1 cup shredded Cheddar cheese

 

      Directions

  1. In a bowl, beat eggs, milk, butter, salt and pepper. Pour into a greased 11-in. x 7-in. x 2-in. baking dish. Sprinkle with onions, bacon and cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean.

Dinner in Ten Minutes : Ramen Noodle Stirfry


This recipe can be made using whatever leftover meats you have in the fridge, or you may opt to use only the vegetables. To add an extra zing, you may top the finished dish with cubed pineapples.

Prep Time: 2 minutes
Cook Time: 8 minutes
Total Time: 10 minutes

Ingredients:
  •          2 packets of Ramen noodles
  •          1 cup frozen vegetables 
  •         (Optional) Left over  Cooked chicken, shrimps, or sausage slices 
  •       Dash of low sodium soy sauce
  • Small can pineapple chunks, optional
Preparation:
1.    Put the Ramen noodles into a pot of boiling water for 1 minute. Drain well.
2.     Over medium heat, add one tablespoon Canola oil to skillet. Let oil get hot, then add the Ramen noodles, vegetables and chicken, shrimp or sausage slices, if desired.
3.    Sprinkle one seasoning packet, and soy sauce over the top of the mixture. Cook until the vegetables are warm.
4. Plate. Top with pineapples and serve.
